Wild Mushroom Mahua Bao

Ingredients

  • For the filling:
  • 1 cups caramelised onions
  • 2 cups mixed wild mushrooms (oyster, button, or shiitake), chopped
  • 2 tablespoons Mahua pickle
  • 1 tablespoons oil or butter
  • 1 salt and pepper, to taste
  • For the Baos:
  • Rehydrated Mahua flowers, for garnish
  • Micro greens, for garnish
  • 20 ready-to-steam baos
  • PREP TIME

Pillowy steamed baos filled with wild mushrooms, caramelised onions, and Mahua pickle. Finished with rehydrated Mahua flowers and micro greens.

Steps:

  1. Build the filling: Heat oil/butter in a pan, add in chopped mushrooms and sautee until brown. Then add in caramlised onions and mahua pickle. Season lightly with salt

  2. Rehydrate the Mahua: Soak dried Mahua flowers in warm water for 10–15 minutes. Drain and set aside for garnish 

  3. Steam the baos: Steam 20 ready-to-steam baos for 6–8 minutes until soft and fluffy

  4. Assemble and serve: Gently open each bao. Spoon in the mushroom and onion filling. Top with the rehydrated Mahua flowers and finish with 1 micro greens, for garnish. Serve immediately.
