Mahua Orange Jam-Filled Brookies By Prachi Pareek.

Ingredients

  • For the Mahua Orange Jam:
  • ½ cup dried Mahua flowers (WildHarvest India)
  • ½ cup warm water (for soaking)
  • ¼ cup fresh orange juice
  • 1 tsp orange zest
  • 1 tbsp raw sugar or jaggery (optional)
  • 1 tsp lemon juice
  • 1 tsp butter
  • For the Brownie Cookie Dough:
  • 100 g dark chocolate (55–70%), chopped
  • 60 g unsalted butter
  • ¼ cup sweetened condensed milk
  • 2 tbsp thick curd (room temperature)
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp vanilla extract
  • ¼ cup dark chocolate chunks
  • 1 tbsp chopped mahua flower

Steps: 

Prepare the Mahua Jam: 

  1. Soak the dried Mahua flowers in warm water for 30 minutes.  Drain and roughly chop the flowers.

  2. In a saucepan, combine the chopped Mahua, orange juice, orange zest, sugar/jaggery (if using), lemon juice, and butter.

  3. Cook over low heat for 10–12 minutes until thick and glossy.

  4. Cool completely and refrigerate for 30 minutes.

Prepare the Brownie Cookie Dough

  1.  Melt the dark chocolate and butter together, then allow to cool slightly.

  2. Stir in the condensed milk, curd, and vanilla.

  3. Sift together the flour, cocoa powder, baking powder, and salt.

  4. Fold the dry ingredients into the chocolate mixture until just combined.

  5. Fold in the chocolate chunks and chopped mahua flower.

  6. Chill the dough for 30–40 minutes until it is thick enough to scoop.

Shape the Cookies

  1. Scoop about 2½ tablespoons of dough and flatten gently.

  2. Place 1 teaspoon of the chilled Mahua Orange Jam in the centre.

  3. Fold the dough over the filling and seal it completely.

  4. Place the shaped cookies on a lined baking tray and top with extra chocolate chunks if desired.

Bake

  1. Bake at 175°C for 11–13 minutes until the edges are set and the centre remains soft.

  2. Allow the cookies to cool on the tray for 10 minutes before serving.
