Roasted Mahua Ladoos by Manisha Ekka

Ingredients

  • Mahua Pops: 50g
  • Makkai Ka Atta (Corn flour) - 100g
  • Ghee: 1-2 teaspoons
  • Pinch of ground black pepper, cinnamon
  • Water: 3 tablespoons

Steps:

  1. Grind: Grind the Mahua Pops into a fine powder.

  2. Mix: Combine the Mahua powder with the makai ka atta (corn flour).

  3. Heat: Warm 1 tablespoon of ghee in a heavy-bottomed pan on low to medium heat.

  4. Mix: Add the Mahua and corn flour mix to the pan and stir well.

  5. Season. Add the rest of the ghee, then the black pepper and cinnamon to taste.

  6. Roast. Stir continuously until the mix turns brown and smells nutty and fragrant.

  7. Bind. Sprinkle in the water a little at a time, stirring until the mix comes together.

  8. Finish. Roast for another minute or two, then transfer to a bowl.

  9. Shape. Once it's cool enough to handle, press small portions into round ladoos.
