Mahua x Raw Papaya Chutney by Mahua (@mahulee)

Ingredients

  • 1/4th raw papaya, thinly sliced
  • 1 small ball of tamarind
  • 1 handful of dried Mahua flowers
  • Pinch of sugar (optional)
  • Pinch of salt
  • 1 teaspoon of panch phoron (Bengali tadka made of whole spices- fennel, mustard, fenugreek, cumin, nigella and randhuni)
  • 1 teaspoon of panch phoron (Bengali tadka made of whole spices- fennel, mustard, fenugreek, cumin, nigella and randhuni)
  • 2-3 dried red chillies, broken in half (depending on your spice levels)
  • PREP TIME

  • cook TIME

  • serves

Steps:

  1. Combine: Add thinly sliced raw papaya, tamarind, Mahua flowers, sugar, a pinch of salt, panch phoron, and dried red chillies, to a pan. Add a splash of water and give everything a good mix.

  2. Slow cook: Cover and slow cook on low heat until the papaya is soft and the chutney comes together. Stir occasionally

  3. Adjust and serve: Taste and adjust sugar, salt, and tamarind to your preference. Serve warm or at room temperature.

Notes: 

  • Can make your own panch phoron if you don’t have it

  • No oil required
