DIRECTION :

  1. Fat wash the whiskey with mahua ghee. Heat the ghee with the mahua flowers in a small saucepan, stirring frequently. Once the flowers bloat and start to turn golden, remove from heat. The aroma should be like caramel. Cool slightly. Pour the whiskey in a glass and stir in the ghee mixture. Leave the glass in the freezer for at least 48 hours.
  2. Scrape the solidified ghee off the surface of the whiskey and reserve. Filter the liquid through a sieve, pressing out the absorbed whiskey from the flowers with the back of a spoon. Add the flowers to the ghee block and reserve in the fridge.
  3. To mix the cocktail, place the ice cube in an old fashioned glass. Whisk or beat the syrup with the bitters, slowly adding in the water until well combined. Pour into the glass, followed by the whiskey. Garnish with orange peel and the skewered ‘cherries’.
