Mahua Khoya

Ingredients

  • 2 cups Mahua flowers
  • Salt – To taste
  • Chilli powder or crushed chilli, to taste
  • 1–2 tbsp oil
  • A tiny piece of charcoal
  • Mahul leaves, for wrapping
  • PREP TIME

STEPS:

  1. Roast the Mahua: Light a fire and place a pan on top. Add the Mahua flowers and roast until fragrant. Remove from the flame.
  2. Add flavours to the Mahua: Mix the roasted Mahua with salt, chilli and oil. Add a tiny piece of charcoal to bring in a smoky note.
  3. Wrap and set: Pack the mixture tightly inside Mahul leaves. Place a weight on top so it flattens and sets.
  4. Unwrap and enjoy: Remove from the leaves and eat while warm.
