Mahua Christmas Cake

Ingredients

  • 100gms Butter
  • 20gms Oil
  • 120gms Brown sugar
  • 85gms Yogurt
  • 180gms All-purpose flour
  • 1/4th tsp Baking soda
  • 3/4th tsp baking powder
  • 1/8th tsp Ginger powder
  • 1/8th tsp Clove powder
  • 1/8th tsp Cinnamon powder
  • 80gms Orange Juice
  • 50gms Bourbon
  • 50gms dry Mahua flowers
  • 25gms Almonds
  • 25gms Cranberries
  • PREP TIME

DIRECTION :

  1. Start off by heating the orange juice and bourbon till you get a boil.
  2. Add the dry Mahua flowers to this and cover for 30 mins.
  3. In a bowl cream the butter, sugar, orange zest and spice powders together.
  4. Add the yogurt and oil, mix until combined.
  5. Mix together the flour, baking soda, baking powder and add in 3 parts alternating with the soaking Mahua.
  6. Lastly add half of the chopped cranberries and almonds and transfer to a 2-pound loaf tin.
  7. Bake at 160c for 50 mins to an hour.
  8. Allow it to cool completely then serve!
