DIRECTION :
- Start off by heating the orange juice and bourbon till you get a boil.
- Add the dry Mahua flowers to this and cover for 30 mins.
- In a bowl cream the butter, sugar, orange zest and spice powders together.
- Add the yogurt and oil, mix until combined.
- Mix together the flour, baking soda, baking powder and add in 3 parts alternating with the soaking Mahua.
- Lastly add half of the chopped cranberries and almonds and transfer to a 2-pound loaf tin.
- Bake at 160c for 50 mins to an hour.
- Allow it to cool completely then serve!
